Paulina Cocina @paulinacocina

Paulina Cocina has been on YouTube since June 2009 and now has about 4.73 million subscribers and over 1,600 videos. It's made in Argentina, and the voice is unmistakably rioplatense, with plenty of local slang. The channel description promises 'recetas fáciles, postres rápidos y comidas que te sacarán de apuro' and, just as honestly, 'niños gritando' and 'mamá retando niños.' The recipes are weeknight food made with what's in the fridge: sweet-potato ñoquis with four ingredients, explained step by step, or a run of quick air-fryer recipes. Long videos usually arrive on Wednesdays, with Shorts in between.

Why now: #AyudaPaulina returned for a new season on Sun Oct 18 (episode 'Concurso de guisos #AyudaPaulina Ep. 7', published that day); 14 uploads in the 30 days to Oct 24.
Upload rhythm: New videos Wednesdays and Sundays (per the channel description: 'Nuevos videos MIÉRCOLES y DOMINGOS')

Not a let's-play channel: these are a solo developer's devlogs for his own cozy farming-and-bakery game, Dough it Yourself, built in Unity with models made in Blender. One episode adds five farm machines, from a windmill to a jam maker; Devlog #4 builds a save system and a character creator and swaps placeholder art for new hand-drawn artwork. Long devlogs come every six to eight weeks: Devlog #4 has drawn about 27,600 views on a channel under 3K subscribers, and Devlog #5, 'The Bakery', went up on Oct 24. He asks viewers to wishlist the game on Steam and offers channel memberships.

Matt Wolfe @mreflow

Claude Opus 5.5 Didn’t Need to Go This Hard

Who he is

Matt Wolfe joined YouTube in April 2009, when his channel was about WordPress and building websites. In late 2022 he turned his own spreadsheet of AI tools into a searchable site, FutureTools.io, and when his AI videos began outperforming his marketing ones, he refocused the channel on AI.

Today the channel describes itself as 'sifting through all the AI noise to share what actually matters', with a new video every Friday. Future Tools is now an AI news site and newsletter, and he co-hosts The Next Wave, a HubSpot podcast, with Nathan Lands.

Why watch

Every Friday he goes through the week's AI releases and tests the new models himself on camera, so you see results instead of just announcements.

He's on camera throughout, with screen recordings of the tools he's testing; the weekly roundup is a fast way to catch up on a busy week.

Gling

Free (1 hour of footage a month, watermarked exports); Plus $20/mo or $10/mo billed annually (10 hours); Pro $40/mo or $20/mo billed annually (30 hours)

Gling is a desktop editor built for talking-head YouTube videos. You upload a raw recording, it transcribes the speech, and its AI cuts bad takes, silences and filler words; you then fix anything it got wrong by editing the text or the timeline. When you're done, you export an MP4 or MP3 with an .srt caption file, or send the cut timeline to Final Cut Pro, DaVinci Resolve or Premiere Pro. The limits to know: the free plan covers 1 hour of footage a month, adds a watermark and can't export to Premiere, Final Cut or Resolve. Plus covers 10 hours a month and Pro 30. The app's interface is in English, but it works on speech in 24 languages, including Spanish and Portuguese. Multicam and separate-mic projects only work if you export to Resolve or Final Cut. Videos without speech aren't a good fit, by Gling's own account.

Verdict: Worth a free test if you record long takes and spend hours cutting them down. Try a single video on the free plan first; pay only if the rough cuts save you real time.
Who it's for: Talking-head creators, in English or Spanish, who cut their own long-form videos and want a rough cut done for them.

Not sponsored. No affiliate link. Gling also appears in ChannelZap's Creator Desk tools list. Prices checked Oct 24, 2026 on gling.ai/pricing (monthly and annual tabs).
